    I constantly buy more bananas than I actually eat before they go brown, so instead of throwing them away, I turn them into other things.

    The original method of consumption was in muffin form. You take a generic blueberry muffin recipe and replace the white sugar with brown sugar and the blueberries with the mashed bananas (usually 2 bananas per recipe).

    My latest idea was banana bread. Recipe as follows:

    1 1/4 cups white sugar
    1/2 cup softened butter or margarine
    2 large eggs
    1 1/2 cups mashed bananas (very ripe/brown)(about 3 bananas)
    1/2 cup buttermilk (random note: smells like liquid cake)
    1 tsp vanilla extract
    2 1/2 cups all-purpose flour
    1 tsp baking soda
    1 tsp salt
    1 cup chopped nuts (optional)

    1. Move the oven rack to low position so that the tops of the pans will be in the center of the oven. Preheat the oven to 350 degrees. Grease the bottoms of either two 8x4 inch pans or one 9x5 inch pan (bread pans) with shortening or cooking spray (I use Pam).

    2. In large bown, stir sugar and butter until well mixed. Stir in eggs. Stir in bananas (ALREADY MASHED), buttermilk, and vanilla until smooth. Stir in flour, baking soda, and salt just until the dry ingredients are moistened. Stir in nuts and divide the batter evenly if you're using 2, or just pour it into the one bread pan.

    3. Bake 8-inch loaves about 1 hour, and 9-inch 1 hr 15 min. Let cool 10 minutes in pans on a wire rack. Stick a toothpick into the bread to test it (if the stick comes out clean, it's done).

    4. Loosen sides of loaves from pans and remove from pans and place right-side up on the wire rack. Let it cool for 2 hours before slicing and wrap it up tightly. It stores at room temperature up to 4 days or in the refrigerator for 10 days.

    Pancakes: alum

    BANANA PANCAKES!!! Just mash up half to a whole banana into the normal recipe batter & voila! (that's french for YUM!)
